Taco Addicts! A Delivery Based Taco Shop

My name is Michael Winneker, I'm a chef born and raised in the Valley who's been dishing out tacos and other various treats to my neighborhood for the last few months. It's been so much fun and something that has kept me afloat since my furloughed back in March...Due to the obvious. The love and support that I have been receiving has been amazing and unexpected. It's got to the point where a brick and mortar would be the next best thing. However with the delivery based market rising every year, and with the stigma of Covid-19, a new approach makes much more sense. With the recent development of a multi-kitchen facility specializing in only delivery and pick up based concepts, I can move in with a low start up cost and simply add equipment and cook! I can even create multiple concepts within one kitchen. 

The main concept would be "Taco Addicts." Specializing in regional Mexican and Sonora  specialties in the form of tacos. Utilizing meats that have been kissed with Mesquite and Pecan smoke, lending it to the indigenous flavors of Arizona. Think Barbacoa, Al Pastor, Carnitas, Carne Asada, Birria, etc. I will only use some of the highest quality Niman Ranch beef and pork as I am now with my current tacos. The menu will change seasonally which is rather unheard of for a delivery based concept. I will also offer refreshing sides, salads, drinks, and desserts. 

With the ASU campus blocks from the kitchen, a large number of business will be generated through ASU sales. Neighborhoods across, Tempe, Mesa, Scottsdale, and Phoenix will all be able to order as they are in the jurisdiction of the facility. This is great, cause even the people currently buying from me will still have access to my tacos. In total 450,000 residences are with in this jurisdiction.  Sales for current successful concepts in the building are ranging from 15k to 25k a week. This currently with the ASU campus not in session. 

In order to lock in my lease I will need $4,000 by August 5th

Basic Financial Breakdown: 

The initial down payment for getting the keys to the place will be a little over $4,000

Licensing $1,500

Equipment would be about $10,000 to $12,000

Food Purchase $1,000

I've been an executive chef at 3 different properties, but it's always been my dream to run my own operation from the ground up, the way I want to. In a professional restaurant there is no sincerity, from the managers, to the service, to the cooks in the back. I want to change that culture and build something human and real, participating in only the most righteous and consistent of business practices.
 
It has been exciting making tacos for my neighborhood and I do not want it to end. At the end of the day this is what I have to offer world. Please allow me the opportunity to satisfy not only my desire, but also the hunger and cravings of my home.
