Growing Produce for Camp

My name is Chris Hedrick and my family owns a small indoor gardening business in Jefferson City, MO. With the project we are proposing, we hope to both give back to our community and raise awareness of the benefits of hydroponic gardening methods vs. traditional soil methods.
We often donate our time to a non-profit here in Rocky Mount, MO called Wonderland Camp. They operate a wilderness camp for the disabled which has been in operation for over 40 years. It's truly an excellent organization that we are very happy to be involved with.
The camp has expressed an interest in starting a garden of their own. I learned after speaking with them that they currently spend roughly $25 a week on lettuce alone; $400 every four months. They also have to purchase tomatoes, cucumbers, peppers, etc. We estimate their food budget to be several hundreds of dollars per week.
Offsetting their organization's produce costs would be a great benefit which would allow them to dedicate additional resources to their core purpose.
It is our goal to ensure we build a correctly sized and complete system. We are planning to build a dedicated 12'x12'x12' enclosed room solely for growing lettuce within our facilties. With the right equipment, we will be able to produce and deliver 30+ heads of lettuce a week in this small room taking advantage of the vertical space as well.
Materials which will need to be purchased include lumber, piping, tubing, lighting, pumps, wiring, and nutrients.
All labor will be donated; costs only include materials which have to be purchased.
We estimate the total cost of this project will be just under $2,000. Any donations in excess of the setup cost will be donated directly to the Wonderland Camp Foundation.
