Smashbakes Goes to Pastry School

Hi everyone! My name is Ashley Khawsy and I am the Sweet Genius and Owner of Smashbakes, located in Chino, CA. I've been baking since I was about 9 years old and hope to my own bakery someday.


For the past couple of years I have worked multiple jobs to support myself and my small business endeavor. By day, I'm an Annual Giving Coordinator at Pitzer College. I previously acted as the Weekend Editor for the popular food news site, Foodbeast, and by night I was baking up sweets for Smashbakes. Of course, it wasn't easy. Juggling three jobs, rarely having a weekend to yourself, and pulling all nighters to meet order deadlines, all while still making it into the office the next day is exhausting, to say the least. 

Smashbakes is a home based bakery specializing in cookies, macarons, and other unique sweets. We've been featured on Foodbeast for our Fruity Pebble Macarons and Cupcakes Take The Cake for our Rice Krispy Treat Cake. As a baker, I have been featured as a Baker Babe on the popular lifestyle blog, The Militant Baker, and am known for making childhood dreams come true with my Reptar Bars as featured on That's Nerdalicious.


As the owner and self-proclaimed sweet genius of this business, I would love the opportunity to live up to my title by learning much more about this passion of mine. Fortunately, there's a wonderful cooking school in Santa Monica, CA, The Gourmandise School of Sweets and Savories, where I have previously attended a Macaron Intensive course. 


The Gourmandise School of Sweets and Savories offers three Pro Pastry classes that cover everything from basic level baking such as Pâte à Choux and Creme Brûlée, to more complicated subjects like Chocolate Tempering, Soufflés, and Croissants. As you can imagine, it's pretty hard to find a class that works with a full-time job schedule, fortunately, these courses are offered on Sundays. Unfortunately, while these Pro Pastry classes sound as incredible as they are educational, they're also quite expensive. Pro Pastry I and II cost $1,200 for each 10 week program, while Pro Pastry III is $1,450. Which adds up to a crazy chunk of change, $3,850 to be exact. 

I would absolutely love the opportunity to attend these pastry classes and learn everything I can to create even more sweet creations for Smashbakes.
