Blind Dietitian makes impact on Blind Community

Unless personally experienced, the impacts of vision loss are fully underestimated. But healthy eating shouldn’t be one of the challenges! 

As a legally-blind dietitian & chef, my passion is helping folks increase their confidence while cooking. This is why I'm expanding my YouTube channel, Quick & Delish by Alicia Connor, to help other blind and visually impaired folks plan and cook their meals. 

The goal of this resource is to encourage a sense of well-being and a positive mindset for health. Because health leads to independence in all areas of our lives!


To make Quick & Delish by Alicia Connor accessible, I’m adding human audio descriptions to my videos. I’ll also get information and feedback from my task force of blind and visually impaired folks, to make sure I’m addressing our community’s questions. Creating a helpful resource is the priority.

Topics will include:
Groceries & what to buy 
Kitchen equipment tutorials 
Meal planning 
Cooking methods 
Go-to recipes
...and any other questions that come up.

About me: 
I’m Alicia Connor, and I’m a Registered Dietitian Nutritionist and Chef. When I was 19, I learned that I had optic nerve hypoplasia (for me, this means pale optic nerves), a hereditary and progressive condition leading to vision loss. My career has been defined by being open-minded to change, while accepting and constantly working with vision loss. After many years as a chef and cook, I went back to school to become a dietitian. It was imperative for me to have a career with longevity. Although I’ve faced a lot of challenges, I choose to focus on what I can do. I run Quick & Delish by Alicia Connor on YouTube, I’m writing an e-cookbook and a virtual meal planning course, and I meet with clients one-on-one to discuss nutrition, behavior change, and meal planning.
