About Geronimo’s Food Truck and Catering Inc.:
The food truck, Adobo Joe, is devoted to the traditional Filipino homestyle cooking. Chicken and pork adobo, lumpia, pancit, and adobo-joe (chicken adobo on a pan-de-sal roll - my version of a sloppy joe) are just to name a few of our food truck specialties.
We have a great passion for what we're doing and we feel an even greater responsibility for bringing this food to the triangle area. We believe Filipino food can stand on its own, and we feel there is no better way to make our cuisine more accessible than having a food truck to deliver it. We invite you into our world of cooking and discover Filipino food like never before!!!
About me:
After a successful 25 year career in the U.S. Army, with over two years deployed in a combat zone, I've decided to take on a new adventure. I have over 40 years of cooking experience. Being the oldest of seven, I was always helping my parents in the kitchen. I remember as early as six years old cooking rice in a clay pot over a wood-fire stove. My family migrated to the United States when I was 13 years old. My passion for cooking continued into adult hood and I started experimenting with other cuisines, especially when I was stationed in the east coast, Italy and Hawaii. While Filipino food is my first love, I enjoy cooking all types of cuisines.
Last year, I attended a course offered by the local Community College on starting a food truck business. The course gave me a distinct competitive advantage. The course was taught by the best, they were county/city offials and business owners, who were subject matter experts in their field. I learned the requirements for operating a mobile food unit, including federal, state, and local regulations; zoning; licenses; and permits. I also learned about health, safety, commissary, and tax requirements, and business essentials such as a business plan, budgeting, costing, and obtaining loans. At completion of the course I was tested on, and passed, the Servsafe Manager Certification Exam, which is mandatory for all food truck business owners in the state of North Carolina. I then obtained a job with one of the local food truck in the area where I applied my training to practice and also to see if this is something I want to do. Working for Flatz Food Truck solidified my decision to start my own food truck even more stronger!
We have been assigned our Employer Identification Number (EIN) from the IRS and our business license from the state of North Carolina. Adobo Joe Food Truck is now an official business! We have also received a quote on transforming our truck, and are making our plan of attack. There is still time to donate, no amount is too small.
This is where I need your help…
I am excited to turn that passion into my business, but I need help. I have acquired a truck that is ready to be converted into a food tuck. While working on my funding for the conversion, I am currently serving a limited menu inside breweries and wineries such as Fainting Goat Brewery in Fuquay-Varina, NC, Fortnight Brewery, and Chatham Hill Winery in Cary, NC. I want to eventually be able to deliver the full menu I have designed, in which I need my truck - this is where GoFundMe comes in.
I am not in the business of getting something for nothing. Any donation receives something:
- $1-$25 receives one free meal.
- $26-$50 receives three free meals.
- $51-$99 receives five free meals and a loyalty card giving 10% off Adobo Joe for life.
-100-$300 receives 10 free meals, a loyalty card giving 10% off Adobo Joe for life and an Adobo Joe T-shirt.
- $301-$499 receives 15 free meals, loyalty card, T-shirt(s), a loyalty card giving 10% off Adobo Joe for life, and catering for a small party (up to 20) within 50 miles of Raleigh.
- $500 and above receives 25 free meals, T-shirt(s), a loyalty card giving 10% off Adobo Joe for life, and catering for a party (up to 50) within 50 miles of Raleigh.
