Caldwell Barbecue Story

The year 2020 has definitely not gone as planned for most of the world and we are no exception. We found ourselves unemployed in the midst of a pandemic and unable to find jobs within our career paths. In the spring, in order to make ends meet we began to cook barbecue dinners for friends and family. This sparked an idea that has now slowly grown into the establishment of Caldwell Barbecue. Through the encouragement of our friends and family we have started this campaign. 

We are Matthew and Judith Caldwell and we’ve decided to start up a humble mom-and-pop barbecue joint that will service Iowa colony, Texas and it’s surrounding communities including Judith’s hometown of Houston, Texas.

In order to provide service to the public, we need to establish a commercial kitchen space. Over the summer a friend sold us a 1957 Spartan Executive Mansion. It is a vintage travel trailer that is made to park at 50’ in length. The plan is to restore the Spartan to its mid century glory then have it inspected and certified for food service. We will run Caldwell Barbecue off our family farm at 4310 Davenport Parkway, Iowa colony TX 77583.

We have always had a heart for the community around us. We love good food, good drink, live music, and a welcoming atmosphere that invites people to come to the dinner table.

The supplies and trades for the restoration of the Spartan Executive Mansion, commercial kitchen installations, commercial equipment, certification, property improvements for parking, electrical, water and drainage. We believe that God has established this work. And will continue to establish the work of our hands. We trust in his provision and guidance as we walk down a new path and career for our family.
