Hi y'all, it's been 2 years and a couple of months since I have opened Con Todo and started this very small business where I have had the pleasure to meet so many amazing people. However, due to ongoing issues with our food trailer needing numerous repairs and the necessity to upgrade to a larger trailer so we can actually fit, we are reaching out to the community that we are so grateful to be a part of for assistance in this new chapter for Con Todo. It would enable us to fully repair my current food trailer and help with a little expansion by getting into the bigger food trailer. Achieving this would enable us to increase production and operating hours, offer daily breakfast options, participate in more events, establish a more meaningful maiz program, retain our employees during this slow period, and ideally secure a more central location to bring our comida and tacos closer to you.
In addition, a significant part of my life's work is contributing more to organizations supporting migrant workers and outreach efforts along the Fronteras as Con Todo continues to grow. I've been advocating for these issues since day one, recognizing their importance. Our industry wouldn't exist without them. They endure harsh conditions and are often treated unfairly while just trying to make a living. They harvest the produce that lands on your plate, in your pantry, and on the menus of your favorite restaurants. They're the ones working behind the scenes in establishments worldwide, yet they're often not given their due credit. This is family's background and I aim to honor these deep roots by advocating for migrant workers.
When I started Con Todo, I never dreamed of the support we've received since our opening in October 2021. Raised by a family of migrant workers from the fronteras of deep South Texas (Rio Grande Valley) and Northeast Mexico, I started cooking out of necessity to assist my family, and it gradually became my life. I'm immensely proud of what we've achieved at Con Todo, spotlighting our comida casera from the fronteras sin fronteras (home-cooked food from border towns without borders), initiating conversations about migrant workers and industry issues, contributing to organizations like Suenos Sin Fronteras, becoming a part of the Austin community, showcasing my roots and cultura at Encuentro, collaborating with wonderful people, and seeing all the smiles that come and go.
Con Todo wouldn't be here without all of you. From the consistent support of our neighbors and regulars since day one to our hardworking cooks who have always been there for me. There have been many times my cooks have surprised me by bringing me food after hours or super early in the morning that they had made because I had to stay overnight to prep. Yes, I have slept in my food trailer on several occasions lol. The unconditional support from those who reached out without me asking to assist at events or help out as a cashier during the initial year when I ran the trailer alone or took photos because they believed in what we were doing. You all know who you are, and to my family and friends who've supported me throughout the years while I've pursued this dream, I'm eternally grateful. You're all family to me.
Achieving our goal would enable us to move forward with these next steps selflessly, fueled by absolutely nothing but chingos de amor. It was difficult to seek help this way, given the world's current situation. But, after discussing this with many of you and close friends and familia, I felt better about doing so, especially considering my intentions behind everything I aim to accomplish.
