Nuestro Querido Enrique Trejo!

 Our Dear Enrique Trejo,

He moved to the U.S with the plan to provide a better future for his young children which he'd left behind at a very young age because he was ademate in securing a stable future for his loved ones.

The sacrifice of leaving his family behind caused him immeasurable pain but he knew it
was best. Upon arriving in Los Angeles , he was able to find employment as a Dishwasher and later moving onto a Prep. With perseverance and steady dedication he earned a position as Line Cook which opened the doors to learning several different cuisines and gained him valuable experience in the field. Enrique's dedication didn't limit him to just one position, in fact he worked two jobs seven days a week. His work ethic and passion for culinary arts was only the beginning. After deciding on dedicating his time to learning the Italian Cuisine he made sure to put his best foot forward making sure his time and dedication was reflected in the best possible way, which ultimately gained him the title of Line Supervisor in a very Prestigious Restaurant Chain.

Enrique was always a quiet, loyal, honest man and a very good father; always proud of his children trying to provide the best for them, his children were always his inspiration. Never complained of fatigue just to keep going and always do better.
Enrique was loved by his co-workers, he was always there to solve, help and make things the best possible for each one of them. He liked to cook and have his dishes taken care of immediately, his favorite word was "Runner" because it was his signal of "The food is ready, take care of it now", so we all had to run to serve his food.
It was a pleasure to work by his side, these days of December without him were very painful, all the time we remembered him and we keep remembering him, that corner of the pasta station will always be "Cuchi’s station”
Unfortunately, our Enrique was diagnosed as Positive with Covid-19 on December 8th and he was hospitalized; then he left the hospital with hopes of recovering on December 13th, but on December 17. He then returned to the hospital by ambulance without being able to breathe that same night he was incubated and we didn't see him anymore; after so the Doctors tried everything possible to save his life... he passed away on January 11, 2021.
All of us who knew him and enjoyed his company are very sad and concerned about his departure, this Virus does not respect anyone.
We will always carry him in our hearts with that contagious smile!
As we all know an unexpected illness or death causes too many expenses and we would like to ask for your help to be able to send Enrique back to his family, we all know that he wanted to return to his hometown.

Rest in peace our dear Cuchi ✨❤️
