Speaking to you from the heart, mind, and body of Fat Rabbit with very big news.
To those I have not yet met— my name is Ellyn Hopper, the founder and baker of Fat Rabbit. Many years ago, Fat Rabbit (without being named as such) was a dream that occupied me daily. Today, I am left quite literally speechless at its growth, success, and acceptance. As has been the case for many, the past few years have been quite a rollercoaster. In that span of time, Fat Rabbit has continued to take different forms. I am absolutely thrilled to share that the newest phase will be the one of which I’ve been dreaming and hoping for roughly 25 years: a permanent bakery.
For all intents and purposes, the Fat Rabbit we now know and love started in a 600 square foot space— the tiniest and most humble kitchen in my apartment in Malvern Gardens. Forever a passion and obsession, I baked for many other businesses in Richmond and elsewhere before finally taking the plunge in mid-2020, committing 100% of my time and resources to my beloved operation. Our home as of the past 18 months has been at Hatch Kitchen, and we've been blown away this year by your commitment to driving all the way to the deepest parts of Manchester in the name of cake! Hatch has been a wonderful home for us throughout this time, but we have outgrown our current model.
In a most unexpected way and in the most surprising time, an incredible opportunity has presented itself, and we are jumping in. Beginning in the early months of 2022, you will be able to visit Fat Rabbit the bakery at our new storefront in UNION HILL! We are indescribably excited to start this next chapter, which will give us a permanent home and allow us to serve you with an eventual cafe space, a full bakery spread, and a place to meet your fellow sweet tooth lovers.
That being said, "we" are a very small operation supported 100% by myself and bolstered by the most wonderful little team. We have been deeply humbled by your loyal support of Fat Rabbit, and now we are asking for your continued generosity in helping us buy equipment and get our new space ready for you. We are making the move immediately after Christmas, and will need to assemble a full kitchen to support all of your cake needs by the end of January. We have been working furiously to financially prepare for this move, but your support would allow us to transition faster and more efficiently.
If you’ve been around for a bit of time, you may have heard me thank you for allowing me to be your “friendly neighborhood cake gal.” As we make this transition, that mission remains in tact. We are thrilled to sink roots into the neighborhoods of Union Hill, Church Hill, and the surrounding areas. We truly want this space to feel like your neighborhood gem, so we are asking you to make it yours, so that we can continue to serve you lots and lots of moreish cake for all your occasions.

To make this move, we are reaching for $20,000. This will help us begin our lease, purchase equipment, gain the necessary permits, and keep us afloat during the transition. It's our goal to make this process as efficient and expedient as possible, so that we can quickly get back to what we love doing. Our big ticket items are our ovens, Hobart mixers, and refrigerators & freezers. In total, these four items alone will range from $10,000-15,000.
While you are welcome to give at whatever capacity suits you, we've created a structure that would allow us to say "thank you" in some very small ways. All merchandise (mugs, tote bags, and T-shirts) will feature a custom design only available during this campaign.
