For the Love of Noodles

With the support of our community, we are trying to raise $5,000+ for a commercial noodle maker for Dennis Lim of Cloudripper so he can grow his business by making more of his best-selling noodle dishes!

Hey, Alex here! You may recognize me as one of the folks taking orders for the Cloudripper Bishop pop-ups here in the Owens Valley. And of course, you all know Dennis Lim, creator, owner, and head chef of Cloudripper. The man, the myth, the legend. Anyone who has had the opportunity to taste the excellence of his culinary genius can see that he pours his heart and soul into everything that he serves. His noodle nights are of particular renown! Ramen, Udon, Dan Dan, he has no shortage of creative yet authentic recipes that water the palate and, in the case of some dishes, offer a good bit of burn as well.

Dennis has been hand-making his noodles since the inception of Cloudripper back in 2019. I've had the opportunity of helping him prepare his noodles and, let me tell you, it is no easy task! Early morning starts to get the dough ready, hours of kneading, rolling, cutting, and portioning to be prepped and ready to head out and cook up for all the eager folks at the pop-up events. Yet, the amount of time that goes into the prep and logistics for each pop-up is staggering, even before you see us out at the event! And although Dennis’ creativity has no bounds, his production capabilities are, unfortunately, in need of some support. Here's where you come in!

Currently, Dennis is operating off of a small 12" dough roller in which he hand cuts many of his noodle dishes such as udon and ramen. Even with the many hours of noodle prep, he is still only able to produce a small number of portions on any given night. Thus, he sells out entirely too quickly. No one wants to show up for noodle night and be turned away due to selling out! So, what can be done about it?

I propose helping Dennis buy a larger capacity, commercial grade 20" dough roller with a noodle cutter attachment to accommodate all his noodle-making needs. Udon, Dan Dan, Ramen, you name it! With this increased capacity, he will be able to prepare many more noodles in a given night. That means more noodles for everyone to enjoy! Though these machines don't come for cheap. We are looking to raise $5000 (or more) to get Dennis well on his way to buying the high-efficiency tool.

With the support of our community, we can help Dennis reach the capacity he needs to continue supplying the highest quality dishes to the Owens Valley and surrounding areas. With an increase in quantity, without compromising quality, together we can make Cloudripper a staple of the Sierra Eastside culinary scene.
