Hey Friends,

Better Say Grace here asking you all to come together and help me make strides towards my dream. For the past 7 years now, I have had the great opportunity to work in top restaurants in the Austin metro area to becoming a private chef for entrepreneurs and food styling for major food companies. The past year has been an incredible experience gaining knowledge from different business owners and learning what is needed to start a business.

However many of you don’t know that I have been in the food industry since I was a baby. I was born in New Orleans, Louisiana and my mother, a Honduran immigrant, worked for two sisters that owned Delmonico’s on St. Charles Avenue. The owner’s house was connected to the restaurant where my mom worked as her housekeeper. My fondest memories come from walking in the kitchen eating turtle soup and in the front of the house being carried by all of the servers who were polishing silverware.

When Katrina happened to my family and I, like so many others, we had to navigate elsewhere to call home. This is where we ended up moving to Lafayette, Louisiana. The food scenes for both, 337 (Lafayette area code) and the 504 (New Orleans area code) were vastly different and not to mention the cultural upbringing of Honduran food that my mom would cook for us would be necessary ingredients to inspire the blending of both worlds.

Knowing that cuisine sparked joy, while I pursued my culinary degree, I worked at restaurants to gain knowledge while booking private chef gigs on my days off from posting on social media. During the pandemic, I began selling plates and donating all of the proceeds to organizations that needed support during that time. It was my way of doing what I loved and giving back in the way I could.

It has always been my dream to open my own food truck and now is the best time to seize the moment while I am being guided by some of the best people in the industry. I thought I had a year to take my time to open but when God had other plans for you, you know you have to seize them and here we are being fast forwarded to a three month timeframe with a pending location in place for me to locate the food truck.

This is where I am taking the time to lean on my community to support me in this endeavor and aid in the funding of this project as the time being expedited to open. This would make you a direct investor in the dream!
