The same chill, pony tailed, all around great guy that has been serving up some of the best sushi in the city (and America) at Akiko’s Restaurant for the last few years has fallen on hard times.
About 10 months ago, while he was peaking culinarily and pushing his cuisine, he received some horrible news that his flu-like symptoms were caused by late stage pancreatic cancer. He kept a positive spirit and outlook on life: working, eating healthy, doing chemotherapy and preparing for a life-altering surgery to remove his pancreas, gallbladder and spleen.
The successful surgery lasted 10 hours, but as a result, he is now diabetic and his incredibly steady hands are not so steady anymore.
His favorite thing besides making sushi for people, is going out to eat and drink. This has become more complicated while navigating new life and the levels of carbs, sugar, and insulin in his body… and no more alcohol. While gaining strength and learning how to live as a diabetic, he has lost about ⅓ of his healthy body weight. His new diet routine is more expensive, hard to find, and requires medication to help with digestion, nausea and diabetes.
Unfortunately, on Valentine’s day 2020, he received a call from a doctor early in the morning telling him that his cancer has spread to his liver. This will require more treatment and medical expenses due to the yearly max out of pocket being reset in January.
Throughout his recovery, he spends his time planning a future restaurant, researching recipes, techniques and styles to make for everyone once he beats this thing!
We are putting together this go fund me page and a culinary event with some of the best chefs, bartenders and servers in San Francisco to raise some money to help him out with:
-some clothes that fit his new slim frame
-uber rides to and from hospital visits
-medical bills
-rent
-new dietary supplements and vitamins
-realize his dream of opening his own restaurant after recovery
-... and of course, more cookbooks!
