What do you do when the things you love are suddenly snatched from you?
Experience has taught me that you only have 2 options: Wallow in your despair OR get up and fight.
My name is Niyah Ajalon Love, I am 17 years old…and blessedly, I chose the latter!
When I was 12 years old, I suddenly developed severe allergies to some of my favorite foods.
No more of my cute cherry tomatoes, precious pineapples, perfect pomegranates, blessed bread, or choice cheese…and to top it all off, the doctors diagnosed me with “allergic rhinitis”. A fancy way of saying, hay fever! However, to put it plainly…the forecast looked cloudy with a side of bland.
After 3 years of this, I made a commitment to myself to remove conventional wheat and dairy from my diet for two weeks. A small change, I know…but a girl was hoping for a BIG miracle! The funny thing is that miracles happen all the time…if you simply know where to look for them. And heaven delivered in the most unexpected way.
After the two weeks of being conventional wheat and dairy-free, I discovered that I actually felt good, all of the time! Might as well get reacquainted with some bread and cheese to celebrate, right? Wrong! I quickly learned that in order for consistently good health, I had to stop eating what I enjoyed so much…and instead focus on a life committed to health and vitality. No longer was I feeling fatigued, the joint pain and constant runny nose had ceased, along with being healed of eczema.
This “revelation” blessed me with such wonderful opportunities and accomplishments as:

- Atlanta Farmers Market organic food demonstrations
- Secured a sponsorship with an organic farm that is across the South-East region to promote locally and ethically raised meats and organic vegetables
- Fortune 500 Company - Catered organic/gluten-free options
- CEO of a DOD Government Contractor - Prepared/Served a meal
- Chef Calicchio - Mentorship
Through these explorations of food, culture and self, I learned that I was much stronger than I imagined. Most importantly, I learned to start dreaming. Dreaming of opening an uncomplicated, organic restaurant that “serves the underserved” so that they too can live the best life ever. I am determined to use the resources I have been blessed with, to “pay it forward” and bless others.
But, no dream comes easy…it would take a shifting of gears…and I was ready to shift.
I worked very hard towards this dream. Studying with an unyielding passion. The Culinary Institute, The French Laundry…perfecting my plating and knife techniques…all while graduating high school early (with a 4.18 GPA), so that I could apply for the renowned Food Management Program at Cornell University and the Healthy Eating and Living Nutrition Certificate Program. I was promised that my further education was taken care of, but due to unforeseen obstacles, that commitment is no longer standing.
So what do you do when the dream you love is suddenly snatched from you?
You think back to that 12-year old, who embraced the small change, in order to receive the BIG miracle! So, here I am now, still determined to obtain that higher education towards my dream. I think back to how many people poured into my life with their love, generosity, time, money, and encouragement, and it brings such joy and hope. This impact could never be measured in words, though here I try. I am so grateful for each and every one of Yahweh’s children. I cannot thank you enough for even taking the time out to read this far. Thank you, thank you, thank you, thank YOU! This education…this dream…would be another BIG miracle, and you’re making it possible.
Please help me to reach my goals, anything will be immensely appreciated. My courses start on November 16th, and I am so close to reaching my goal of $12,000.
P.S. Please don't think that any amount of money is too small. Honestly, $5 is plenty. You shouldn't feel you have to give any more than that. I believe there are enough people who care, that with $5 each, we will pass the goal easily.
I commit to using the education I will receive from this blessing to help others. I will be diligent in my studies, and I will uphold integrity in all that I do. I will take this blessing, and in turn, I will use this education righteously, and not take it for granted.
