Lizzie Rodriguez is the owner of Tu Amor Cakery, the first and only Diabetes/Keto friendly bakery in Upstate NY. When Lizzie and Roberto moved to the current location, they invested much of their savings into remodeling the storefront to make it customer ready. Due to rising costs, supply chain issues and health concerns, Tu Amor Cakery needs to close its doors (at its current location) and settle outstanding debts. Once that chapter is closed, Lizzie and her husband hope to look for a cozier location to make our goodies and treats again!
Lizzie started baking at the age of 8. She always wanted to open a bakery, and many of us found her at her original location on South Ave in Rochester. After making a diabetes friendly cheesecake for a friend, and receiving rave reviews, she saw a way to provide a community with something that was badly needed! Lizzie and Roberto were forced to relocate when the building they were renting was sold. They reopened in 2021 in the Genesee Valley Regional Market in Henrietta where others of us discovered her magic. The move was generally a positive one, but post-COVID inflation has wrecked havoc with their expenses. Prices of ingredients and packaging doubled over the past year. The cost of eggs, which account for 30% of her products, have tripled over the past year. A case of eggs jumped from about $19 to about $65. Butter and sugar replacement also increased dramatically. According to the producer price index from the Labor Department, in January, wholesale prices are up 9.7% over the past 12 months.
Increasing prices on baked goods clearly isn’t enough to keep up with the increases in the cost of supplies. Inflation isn't getting any better. Lizzie and Roberto have made the heartbreaking decision to pay off debts and close their doors—FOR NOW!!
Several of Lizzie’s loyal customers have suggested a GoFundMe site to help settle her outstanding debts associated with remodeling her current storefront. She and Roberto were willing to sell all of their equipment and supplies, and had made arrangements, but it fell through leaving her back at square one. We all know Lizzie. She’s proud, caring, and has deep faith in God. You wouldn’t believe how much convincing it took to get her to agree to do this!
Her story doesn't end on November 19th when the doors close on her current location. A new chapter begins. Please help us lift her up so she can get to that new chapter quickly (and we can start planning when we can visit her at her next location!!)!
