HELP US CONVERT A WAG-N-DRAG LORRY INTO THE TRAVELLING RESTAURANT OF OUR DREAMS!

Last year, after running away from the circus, we did something radical…

We bought a 19m long wag-n-drag lorry to convert into our home and business, a travelling restaurant called Josser. In circus speak, Josser means outsider and is a nod to the many magical years we spent with the circus.

Over 8 months, we have transformed one of the compartments into our beautiful, cosy family home for the two of us, Ols and Amber, with our 3-month-old son, Zephyr, and loveable black lab, Steve.

In the other compartment, we have created a professional kitchen fully equipped with everything a chef could need, as you can see from all the pictures!
The lorries are ‘jack-knifed’ to give us an enclosed seating and dining area for guests, over which we have erected a canvas-clad awning.

This is where we need your help. Following our successful first season, we would like to make the whole guest experience even better. So, we are raising funds to do two things:
  • Stage 1: Weather-proof and heat the tent for winter 2024
  • Stage 2: Construct a second dining tent for summer 2025

As you approach, you feel a sense of anticipation and you can almost feel the ambient heat from the candles; the air scented with freshly baked bread and roasted garlic.

Imagine a restaurant that can travel almost anywhere, from wildflower meadows to castles and village greens or just a field in the middle of nowhere.

During the summer months, the touring restaurant will host festival vibes, filled with flowers and verdant foliage, open to the passing world so you can dine watching the sun sink beneath the horizon.

During the colder months, the tent will be cosy with glowing fires and tapestries adorning the walls as you shelter from the brisk outside for a hearty feast.

The menu changes with the seasons, and from what is on offer in the local small-holdings, butchers and greengrocers near to where the tent is pitched.

Our food ranges from humble to elaborate so it’s available to everyone.



Our idea is simple, to be ever-changing and ever moving. We hope you join us on our travels.

About us
Ols Halas is an award-winning chef and co-author of the critically acclaimed Giffords Circus Cookbook, which includes recipes from his 11 years of touring. Ols never wanted to do anything other than become a chef! From an early age, he insisted on cooking for his parents’ friends and wrote menus in crayons. His cooking is completely original with an emphasis on locality, seasonality and surprise.

Amber White is a yoga teacher and food enthusiast! With a degree, a masters and years in primary education, she is passionate about teaching. Amber trained in Rishikesh (India), the spiritual home of yoga before completing further training in Cheltenham. For Amber, both food and yoga offer connection – to ourselves, our communities and nature.

Ols and Amber are childhood sweethearts who met while working next door to each other over a decade ago.
