Lydia is Very Sick

Two days ago Lydia was a bit listless and not eating, but had no fever, so we decided to give it a day and see if she improved. Yesterday morning she was doing worse, with a fever of 104.1F, so I took her to the emergency vet where they ran blood work and let her go home after sub-q fluids, antibiotics for a suspected UTI, and an anti-nausea injection. I was told that if she did not improve over night, I needed to bring her back. This morning, with a fever of 105F, I did just that.
I just spoke to the vet, and things are... not great. She has pancreatitis, and fluid has begun to build up in her abdomen. Her liver levels are higher than yesterday, which could mean she is on the verge of hepatic lipodosis, which is a huge risk when an obese cat goes too long without eating. She also may be diabetic, but cats can have high blood sugar from stress and infection, so it's hard to tell. She is currently on IV fluids and has a feeding tube.
We spent close to $600 on yesterday's visit, and I had to leave a deposit of $1600 today, which will cover costs IF I am able to pick her up tomorrow, which seems pretty unlikely.
We just went through Selwyn dealing with bladder stone surgery, and then a hernia surgery, in early October, and this has slapped us out of the blue, right on top of Christmas. Lydia was just at the vet about 3 weeks ago, to be checked out so we could get her on a diet plan and slim her down slowly and safely. The vet saw no reason for blood work at the time because Lydia had no symptoms that would indicate any issues, so none was done, and right now I am kicking myself, but what can you do?
