L'Osteria di Cascina Clavarezza

Tutto inizia nel luglio del 2020 quando il Consorzio Rurale di Clavarezza nella persona di Remo Oberti acquista l'immobile dove un tempo sorgeva l'antica Osteria del Grixu, un luogo di ritrovo per il paese di Clavarezza e per tutta la Valbrevenna. L'intendimento è quello di ristrutturare i locali in economia per poterlo riaprire. Parte quindi una bellissima raccolta fondi che, grazie a generose donazioni, riesce a raccogliere oltre 7.000 €. Un grazie di cuore va ad Angela, Steve, Regina, Chris, Renato, Lisa, Paola, Anna, Vera, B&B del Cuore, Teresa, Lorenzo, Donato, Marina, Chiara, Diego ed Elena.

Durante questi anni molti lavori vengono effettuati e i locali vengono quindi utilizzati in via informale per belle occasioni di incontro tra gli abitanti di Clavarezza.

Ed anche qui ci preme ringraziare tutti coloro che si sono adoperati per prestare il proprio lavoro di volontariato. Grazie davvero ad Aldo, Nelly, Annalisa, Paolo, Sergio, Silvana, Marisa, Vittorio, Luca, Remo, Mariagrazia, Daniela, Simonetta, Sandrino, Alessandro, Simonetta, Marina, Claudio, Cristiano.

La gestione dei locali, con tutte le restrizioni burocratiche e le normative vigenti in tema di sicurezza nei locali pubblici, risulta tuttavia molto complessa e il Consorzio decide quindi a malincuore di cedere l'immobile.

Ed è in questo momento che noi di Cascina Clavarezza decidiamo di fare la nostra parte per non lasciare cadere nel vuoto tutto il lavoro e gli sforzi fatti fino ad ora. Nel Giugno del 2024 acquistiamo quindi l'immobile con il serio intendimento di aprire un piccolo ristorante in questi locali che non potevano andare perduti. Il nostro sogno è quello di fare una cucina genuina e con prodotti di qualità, il più possibile a km0, con prodotti della nostra azienda agricola e di quelle del luogo.

La nostra passione e il nostro entusiasmo ci spingono a cercare il meglio in tutto quello che facciamo e desideriamo rendere sempre più speciale questo luogo nel quale abbiamo deciso di venire a vivere ormai 8 anni fa.

La Valbrevenna è un territorio magico, incontaminato e puro, dove i rapporti umani contano ancora e il contatto con la natura fa parte della vita di tutti i giorni. Vivere il territorio per noi significa soprattutto creare lavoro, occasioni di incontro e momenti di condivisione, pur conoscendone gli ostacoli e le difficoltà.

Aprire un'attività di ristorazione in un paese dell'entroterra come la Valbrevenna ha senza dubbio una prospettiva di afflusso di persone decisamente inferiore rispetto alla città. Tuttavia gli adempimenti burocratici e le spese per metterlo a norma sono le medesime.

Certificazioni degli impianti, attrezzature professionali, corsi e attestati per la sicurezza e quant'altro; non esiste nessuna deroga che compensi la difficoltà del territorio in cui si opera.

Le spese che stiamo affrontando stanno andando ben oltre le nostre previsioni ma non ci vogliamo fermare e contiamo di aprire entro la fine del mese di settembre.

Chi avesse piacere di sostenere, anche con una piccola somma, questo bellissimo progetto preso in eredità e fatto nostro con tutto il cuore, ci darà una spinta ulteriore e capiremo così di aver fatto la cosa giusta.

A tutti coloro che avranno il piacere di sostenerci, stiamo realizzando un gadget davvero speciale come segno di ringraziamento.

The original project started in July 2020 when the Rural Consortium of Clavarezza in the person of Remo Oberti bought the property where the ancient Osteria del Grixu once stood, a meeting place for the village of Clavarezza and for the whole of Valbrevenna. The goal was to renovate the premises in economy in order to be able to reopen it. So it started a beautiful fundraiser that, thanks to generous donations, managed to raise over € 7,000. A heartfelt thank you goes to Angela, Steve, Regina, Chris, Renato, Lisa, Paola, Anna, Vera, B&B del Cuore, Teresa, Lorenzo, Donato, Marina, Chiara, Diego and Elena. 

During these years many works were carried out and the premises were therefore used informally for beautiful meeting opportunities among the inhabitants of Clavarezza. And here, too, we would like to thank all those who have worked to volunteer. Really thanks to Aldo, Nelly, Annalisa, Paolo, Sergio, Silvana, Marisa, Vittorio, Luca, Remo, Mariagrazia, Daniela, Simonetta, Sandrino, Alessandro, Simonetta, Marina, Claudio, Cristiano. 

However, the management of the premises, with all the bureaucratic restrictions and regulations in force on security in public premises, was very complex and the Consortium therefore reluctantly decided to sell the property. 

This was moment we decided to do our part not to let all the work and efforts made so far fall into the void. So in June 2024 we bought the property with the serious intention of opening a small restaurant in these places that could not be lost. Our dream is to make a genuine cuisine with quality products, as much as possible at km0, with products from our farm and those of the local. 

Our passion and enthusiasm push us to look for the best in everything we do making this place where we decided to come and live 8 years ago more and more special. The Valbrevenna is a magical, unspoiled and pure territory, where human relationships still matter and contact with nature is part of everyday life. Experiencing the territory for us means above all creating work, opportunities for meetings and moments of sharing, while knowing its obstacles and difficulties. 

Opening a catering business in a hinterland town like Valbrevenna undoubtedly has a much lower prospect of influx of people than the city. However, the bureaucratic obligations and the expenses to bring it up to standard are the same. Plant certifications, professional equipment, courses and certificates for safety and so on; there is no derogation to compensate for the difficulty of the territory in which it operates.

The expenses we are facing are going far beyond our forecasts but we do not want to stop and we expect to open by the end of September. Those who would like to support, even with a small sum, this beautiful project bequeathed and made our own with all their heart, will give us a further boost and we will understand that we have done the right thing.
