Greetings, community supporters of Wilson Farm and our herbal iced cream!
Brenden and I, Lindsay, are reaching out to you to help us further all of our (yours and ours) ice cream dreams.
When we first opened our market doors in 2020 we could never have imagined that making ice cream would become such an integral part of our business. When we were presented with an opportunity to buy an ice cream machine back in 2022, we took a huge risk on how herbal ice cream would be received. But, once we churned up that Rosemary Maple Sea Salt, there was no turning back. Only because of the feedback we've received and the push to keep going are we at a point where we are looking towards what comes next.
Our vision from the beginning with the ice cream was to be making our own base mix, for a couple of reasons. One, so that we could control the ingredients that go into the mix and two so that we could be using and supporting local dairy to be creating a high-quality product that supports our local food systems and agriculture.
We are seeking funds to help us purchase the equipment required to obtain our Milk Handler's License and become a Licensed Dairy Plant. This includes a 45 gallon vat pasteurizer, chart recorder, thermometer and pump and chiller which are all approved by the state per their guidelines.
Not only will this allow us to make our own mix and use local dairy, but it would allow us to be able to distribute! We would be able to wholesale pints across the state and sell tubs to restaurants and stores. Which means you could enjoy our herbal ice cream all year round from all over Vermont.
