
Help Tacocat Cantina Make a Home in Randolph, VT

We are reaching out to you to ask for some support with start-up costs for Tacocat Cantina, soon to be opening up at 21 Merchants Row in beautiful Randolph, VT.
Since the spring ,the Randolph area community has become quite familiar with our food truck, Taco Truck All Stars, while we have been set up on Route 66, just below the whales tales. We have gained such a huge following and have been so welcomed into this amazing community. It as been such a pleasure getting to know our customers whose support has been humbling to say the least. We have so many fans all over Vermont and beyond who we appreciate so much and want to thank from the bottom of our hearts!
When COVID-19 hit our communities in the spring we were preparing for the worst, and hoping for the best. We had no idea how we would make it through our normally event packed schedule, when our entire business model depends on social gatherings to be successful. We knew we had to think fast, adapt our business model and seek out opportunities we would have never been able to explore normally.
When we were invited to set up in Randolph in the spring we had no idea what was in store for us! We not only were able to set up 3 days weekly while adding locally raised goat meat to our menu, we were able to support a local farm, and the local economy, while bringing the community a new and different food option-Mexican, and with the new menu addition we could offer something to the community that was unique.
As the season progressed we got to know so many of our customers by name and the outpouring of support just kept coming. Now that the fall is here we have been asked more times that we can count,
"How long will we be able to get your food through the fall?'
"Have you ever considered opening up a spot downtown?"
"What am I going to do in the winter when you are not here?"
Then one Monday while we were set up downtown we were approached by a local landlord to see if we were interested in a commercial restaurant space. The decision to jump on it was made easy by the support we have been shown by the community. There were so many encouraging signs that led us to taking this leap.
So, we are asking for some help with initial start up costs. We want to start on the most successful foot possible. We need to purchase kitchen equipment, renovate the space to make it our own, take care all of the permitting and licensing fees, as well as many other costs one would incur when starting a new business. Opening any business can be a bit scary and overwhelming. Opening a restaurant during a pandemic, one might think we were nuts! But our customers have spoken and we have listened, and we want to continue to provide the area with a fresh, affordable, and different dining option.
A huge part of Taco Truck All Stars' mission is giving back to the community. This is not something we necessarily advertise. We do numerous fundraisers for many amazing causes, donate to help pay off student lunch debt, we provide our local low-barrier warming shelter with weekly hot meals. This mission will be a integral part of Tacocat Cantina as well. We feel this will be a wonderful and beneficial addition to the downtown and are so exited to call Randolph home.
This additional financial support will ensure that we open up in the most successful way possible to also ensure that the roots we grow in Randolph will be lasting. This has been a very unique season for us. The pandemic has been hard on our business to say the least, but because of the support of this community we have not only been able to survive, we have also been able to explore this new, exciting path that is Tacocat Cantina!
