The Food Fighting Bike Stall

We all wanna save the World, right? But how? What can I, as a small insignificant human do? I fight with food!!! Will you help me?

I live in a community that houses an ORGANIC VEGAN GLUTENFREE bakery, and I want more people to learn how great bread you can get, that is not as bad for the Planet as the conventional bread.(All organic and vegan - and soooo tasty!).

I also do a lot of food saving. From the wholesale market a friend and I save between 400-1200kg of fruits and vegetables a week - mainly organic, that would have been trown into the dumpster, had we not picked it up and shared it for free with our community, neighbours, friends and family. Thats a lot of water, work and energy wasted if not saved!

I love doing this, but I also have to have an income for me and my daughter Holly... I just can' t take a job that does not make sence in a world on fire. I would wither like a flower without sun... And I also need flexibility to do my transition work, local currency projects, teaching and fundraising for other great projects with other people. All work that matters to me.

The municipality of Copenhagen offers entrepreneurs licenses to create food stalls on bikes. They have to have a sustainable and possibly organic vision. YAY! I can do that! I can flex in - and be my own boss.

My community is at an organic farm, and we will also be growing stuff I can sell. Fruits, vegetables and edible flowers in season. Out of season I can get produce from the wholesale dealers of organic food - maybe even save some food from there.

But the best thing is, that it will create a platform for me to have great conversations about sustainability, Permaculture, Transition, life, the Univers and all, while sustaining myself and Holly having a meaningful job, helping others to choose the more sustainable way of fighting climate change - with food!!! Food fighting... OK, you get it ;)

I already made one bike stall for the sustainable flowershop that I was co-founding 4 years ago (see cover photo). It is still running on volunteer basis, and that is why I know people really WANT to fight - they just have to learn how.  It sparks the conversation = plants a seed.

Will you help me teach them/plant seeds? Then please donate a $, £ or 2 - or please knock yourself out, and make it more!!! I will treat you with an organic vegan glutenfree cake or a bag of veggies and fruit, when you come see the result in action. I'll even throw in a hug too <3

I have a team of handywo/men in my community who are ready to help me  build the bike. Even with the electric feature I would not be able to do without - yes I'm only half size... I need help. 

It has to live up to the standards of the Danish Food and Health regulations, including fresh water for sanitizing, sneeze screens infront of the bread, a cover to prevent birds from shitting on it, and all the trafic safety stuff too. It all costs, and this is Denmark, so you can' t (and should not) fake it. That' s why I need a bit of help to get started...(First drawing... do you like it ;D? Please feel free to come with surgestions!)
