Coping with a life-threatening disease is difficult. Life centers around clinical visits, treatments, hospital stays, and medical bills. Treatments are a costly, but a necessary expense for the Cowherd family.
On Wednesday, May 31, Babalu Tapas & Tacos will host Parker’s Taco Shop. Proceeds from the all-day pop up restaurant will benefit Parker Cowherd, an eight-year-old Charlotte resident with an extremely rare glioneuronal tumor that spread down his spine and into his lower brain. Parker has been undergoing chemotherapy for nearly 18 months.
“Parker has an infectious smile. He is fun, smart, strong and can strike up a conversation with anyone, anywhere he goes,” says Allison Cowherd, Parker’s mother. “He loves people and is an avid Carolina Panthers and Carolina Gamecocks fan! He is in the first grade and loves school. His favorite subject is science.”
“These taco shops represent our commitment to genuinely impact everyone we come into contact with in a positive manner. Really, the community deserves all the credit for supporting these families,” says Ben Miller, Director of Operations for Babalu Tapas & Tacos. “We have the honor and privilege of hosting the event and bringing these two groups together. My family and I are proud to be associated with a company that prioritizes helping those in need, like Parker.”
Babalu will donate $1 for every taco sold during Parker’s Taco Shop to help alleviate the cost of Parker’s medical expenses.
